About This Course
By the end of the Lesson, Learners will be able to apply food science principles in daily food preparation to enhance customer’s food consumption experience.
What You'll Learn
LO1 – able to illustrate the evolution of customers' tastes and habits under the food science
LO2 – able to recommend the different type of substitute ingredients with healthier options
LO3- Able to apply the different methods of low-fat or dairy-free formulas to increase the nutrient density of food products
LO4- able to apply cooking techniques to enhance food consumption experience under the consideration of the relationships between various senses and food.
LO5 – able to interpret the relationships between food presentations to enhance customers’ food consumption experiences.
Entry Requirements
• Have a basic understanding of the basic cake knowledge and food hygiene
• Be able to speak, listen and read English at a proficiency level not lower than the Employability Skills Workforce Skills Qualification (ES WSQ) Workplace Literacy (WPL) Level 5
• One year working experience preferred at the restaurant, Pastry shop, Mini-bar or food shop etc.
• Basic knowledge on the basic pastry, confectionaries or cake making etc.
• Basic knowledge of hot & cold dessert and pastry preparation
• All trainees should to have a valid Food Hygiene Certificate during the registration process
