What You'll Learn

This course aims to equip learners with the critical knowledge, skills, and attitudes necessary for creating and serving safe, nutritious, and wholesome meals to consumers. Recent advances in food science and technology have opened up new opportunities for Singapore's Food and Beverage businesses to explore the use of novel ingredients and techniques in food preparation. While these new developments have the potential to benefit the Food and Beverage industry by diversifying food offerings and reducing operational costs, food safety and nutritional aspects must not be overlooked. As the Singapore Food Agency is enhancing its food testing and monitoring functions, Food and Beverage businesses need to strengthen their capabilities in food safety to comply with relevant regulatory requirements. Simultaneously, an increasing number of Singaporeans are suffering from non-communicable diseases (e.g., diabetes, cancer, etc.) due to unhealthy dietary habits. This, coupled with the growth of an aging, health-conscious population, has led to an all-time high demand for food safety and nutrition. Therefore, the ability to design and serve wholesome and nutritious meals catering to various dietary needs will not only allow Food and Beverage businesses to better serve our population but also enable them to venture into new market segments. In this program, learners will be taught the critical aspects of nutrition and food safety relevant to the Food and Beverage industry. They will then apply this knowledge to: (1) create healthy dishes and wholesome meals for consumers with different dietary needs, and (2) identify food safety risks and suggest approaches to manage these risks.
