About This Course
This course aims to provide learners who are interested in pursuing a career as a professional chef or cook with a food shop that features western cuisine. The learner will gain the competency in preparing and cooking western cuisine salads, that can either be offered as a stand alone menu item or used as a complementary component of a menu item.
What You'll Learn
Learners are able to achieve competency in the following:
a. Identify the different types, complementary combinations and correct portions of ingredients suited for different salads.
b. Interpret recipes, methods, principles, techniques, consistency and quality characteristics of preparing different types of salads.
c. Explain the impact of cold temperature on flavour .of salads and prepare different salads at the required temperatures using suitable preparation techniques.
d. Assemble different components of salads with effective colours, heights, shapes and textures depending on the style of presentation.
e. Apply artistic balance of complementary flavours, colours, shapes and textures in garnishes, salads and dinnerware.
f. Present salads using different methods of plating with suitable garnishes for aesthetic purpose and flavouring.
