About This Course
This course aims to provide learners who are interested in pursuing a skills-based career in the food services industry with the necessary expertise in preparing and cooking western cuisine using lamb as the main ingredients.
What You'll Learn
At the end of the course, learners will be able to demonstrate competencies to:
a) Inspect the quality characteristics on the different ingredients used for western dry-heat lamb dishes.
b) Improvise on different complementary combinations of ingredients for spreads, fillings and garnishes best suited for western dry-heat lamb dishes.
c) Prepare various compound butters according to recipes and methods of preparing different types of western dry-heat lamb dishes.
d) Explain the caramelisation process and the importance of achieving uniform caramelization when preparing western dry-heat lamb adishes.
e) Mix ingredients to achieve desired tastes by combining complementary flavours and cooking techniques to prepare and cook different western dry-heat lamb dishes.
f) Apply artistic balance of complementary flavours, colours, shapes, textures in garnishes and western dry-heat lamb dishes.
g) Present finished western dry-heat lamb dishes with effective colours, heights, shapes and textures.
